About Mizunoto
A faithful foundation for Japanese cuisine, crafted with integrity.
My journey with dashi began 27 years ago when I married into a family running a fishery in Suruga Bay, specializing in Numazu-bushi. Before that, I had no interest in dashi. But through my family’s business, I started to use generous amounts of shaved bonito flakes every day in miso soup and simmered dishes. I grew to love its familiar, comforting taste.
There’s nothing quite like coming home exhausted from a long day and enjoying a bowl of miso soup made with delicious dashi. That gentle, warm flavor truly feels like a testament to the traditions of Japanese cuisine, carefully protected and nurtured over generations.
Today, time moves faster than ever. We've seen a rise in convenient, quick-to-prepare dashi products, and I know many people rely on them. However, as a traditional food, I also sense a certain fragility in this convenience.
We created our dashi to be elegant, soothing, and a source of smiles at the dinner table. By using only the finest natural ingredients and absolutely no seasonings or additives, we faithfully and honestly bring out the genuine flavor of our ingredients. It is our greatest hope that people both in Japan and abroad can find peace and comfort for their bodies and minds with mizunoto's dashi.

80 years of crafting Numazu-bushi near Suruga Bay

A Legacy of Quality and Tradition
Founded in 1946 near Numazu Port, our family business, Yamadaira Suisan Co., Ltd., has been crafting Numazu-bushi from the rich bounty of Suruga Bay for 80 years.
Our unwavering commitment to quality was recognized in 2006 when we were honored with the Yellow Ribbon Medal from the Prime Minister of Japan (the late Shinzo Abe).
Building on this legacy of trust and proven excellence, we launched our sales division, Yamahei-Mica Corporation, to dedicate ourselves to the promotion and preservation of authentic dashi.
