For 80 years since our founding, Mizunoto has deliberately turned its back on "efficiency." Even in an age where mass production is possible with the push of a button, we know there is a "realm of flavor" that machines can never reach. Today, we would like to introduce Mizunoto's exacting manufacturing methods, created by artisans who spare no effort or sincerity.
1. Conversing with the Fire: The Traditional "Te-biyama" Method
The "Te-biyama" style is said to be Japan's oldest method for making Katsuobushi (bonito flakes).
Firewood is burned in a hole dug in the ground, and the fish placed on steamers above are smoked using strong heat and smoke to remove moisture and seal in the aroma.
Because it requires extremely advanced skills, it has become a rare method today.
At Mizunoto, veteran artisans with over 40 years of experience watch over the fire constantly every season. They check the condition of the firewood, the amount of smoke, and the dryness of the fish using all five senses, transforming fresh fish into the finest "Fushi" (dried fillets).
It takes time and effort, but it produces a powerful aroma and umami that can only be achieved through this method.
2. Preserving the Essence of Ingredients: The "Water-Cooled Mill" Method
Our popular product, "Dashi Cocktail," sells over 60,000 bottles annually.
The secret to its deliciousness lies in our gentleness towards the ingredients.
Conventional grinding generates heat, which tends to destroy delicate flavors. That is why we adopted the "Water-Cooled Mill Method."
We grind the ingredients into a fine powder, similar to Matcha, while cooling the stone mill blades with cold water. We grind slowly and carefully to avoid subjecting the ingredients to heat stress.
It takes time, and the amount we can produce at once is very small. Nevertheless, we believe this is the only way to deliver the ingredients' original rich aroma, umami, and nutrition directly to our customers.
